Under the slaughterhouses of Anderlecht, Eclo has transformed unused cellars into a most original farm. Eclo is the fusion of an urban micro-farm and the production of mushrooms from recycled beer draff from @brasseriecantillonofficiel and organic bread waste. In 2021, they recycled 18 tons of bread; their goal is to recycle 10 times more next year!

🍄The mushroom in the first picture is a white pompon and in China this mushroom is called Houtou, which means "monkey's head".
🍄An oyster mushroom ('pleurotes') takes 1 month to make, while a shitake takes 3 months
🍄Each bag you see in the pictures represents a mushroom, what we eat are in fact the reproductive organs of a mushroom
