The idea for Hermine took shape during the pandemic. Anna used this period to work on her business plan with the help of Villages Partenaires. Despite delays in equipment delivery, she opened her pastry shop in November 2021, accompanied by a small team. The name "Hermine" evokes Brittany, and this is reflected in every creation. From the start, Anna offered Breton specialties such as kouign-amanns, far bretons, and butter sablés. Today, the menu has expanded, offering viennoiseries and a varied range of refined pastries that evolve with the seasons.
At Hermine, each product is carefully crafted. Madeleines, buckwheat and hazelnut financiers, and gluten-free brownies made with buckwheat flour are among the favorites. Chouquettes, brownies, and madeleines are must-haves, while more sophisticated creations like millefeuille and vanilla chocolate éclairs also delight. The Hermine team is composed of passionate women. Julie, the first saleswoman, quickly moved to full-time, joined by Charlotte.
Hermine experienced rapid growth, reaching in six months the objectives set for the third year. This success is due to the quality of the products and the warm welcome. The bread, delivered every morning by Boulangier, and collaborations with the caterer Brut and the neighboring climbing gym, illustrate the importance of local partnerships for Anna. She plans to introduce new products such as cider and a Breton pâté. However, she has no intention of opening other establishments, preferring to focus on Hermine and possibly share her expertise as a teacher.
